Will Airport Extreme be sufficient for a large house? I would have to have the router on the main floor and my kids want it to reach the PS3(far away)

That depends on a myriad of factors, including construction of the house, and any nearby WiFi base stations (eg in neighboring homes). Usually one base station is sufficient for a typical single-family home, but the only way to find out is to try it. Two general things to keep in mind:
1. Place the base station in as central a location as possible (both vertically and horizontally) relative to where your users/devices will be located. WiFi trades performance for distance, so the closer you are the faster it will likely be.
2. Keep all WiFi devices at least 10' (3m) away, in all directions, from any microwave options.
If one base station proves insufficient, you can add more (in which case you might wish to reposition the original). Trial and error is really the only way to get things working to the optimum.
