Can these be plugged into a airport extreme to be used with Airplay?

Yes, just like any speakers.
I have this set up at home and works great, for connecting Mac and iPhone. It also has another input at the back if you wanted to leave a cable there for a device that doesn't support AirPlay. On Mac I've only found iTunes to support AirPlay (many apps on iPhone) but there are a few Applications you can download to send all of your Macs audio to AirPlay Speakers, I use Porthole.
