Answer
No, they only sell them as one kit. If you just need one, I'd get a regular plug converter. Your Apple AC adapter will do the voltage conversion, so you don't even need an electrical converter, just the plug.

Will the Apple World Traveler Adapter Kit work in Tunisia? If so, which plugs do I use? Since the plugs are not labeled, do I use the one
with the fatter prongs or thinner prongs (I think Tunisia uses one with round prongs).

You'll need a charger with a 2-prong EU adapter for Poland. The Apple adapter kit will do that for you. I personally bought a Kensington International Travel Charger for iPhone. That works really well, and costs a few bucks less. You simply snap in the prong you need depending on where you're visiting. Have a great trip to Poland - nice place to visit!
