This is highly dependent on the construction of your office or home, as well as the number and type of other WiFi devices in the immediate vicinity (eg apartment building). WiFi trades speed for distance (ie the farther away you are, the slower the network link will be).
One Airport/Time Capsule should be able to cover a typical single-family home. If you want more performance or coverage, you can extend an Apple WiFi network with multiple devices configured to work in concert.
You want to keep any WiFi device at least 10' (3m) away from any microwave oven (horizontally and vertically), as microwave ovens generate radio waves in some of the same frequencies that WiFi operates in.
