What is the best wireless backup for a Mac Book Pro? Not a lot of data to store either. Time Capsule, Airport Express or Airport Extreme?

For an all-in-one solution, probably the Time Capsule is the way to go. That said, I've had great results using an Airport Extreme wireless base station plugged into a third-party external hard drive. The way I'm doing it is not "Officially Supported" by Apple, but it's still pretty simple to configure.
That said, your simplest solution will probably be a Time Capsule. If you've got a 250GB or smaller hard drive on your MacBook Pro (and you're just backing that one computer up to the Time Capsule), a 500GB Time Capsule will be more than adequate.
