What is the best way to connect a wired switch to my Airport Extreme? Cable modem to Airport to switch? Or cable modem to switch to Airport?

    You want modem - airport - switch. The airport provides NAT and other services to your local network. Connecting the switch directly to the modem deprives anything connected to the switch of those services.
