My son works on FaceTime with a Dyslexic instructor, is it possible to use this to write paragraphs and have his instructor see it simultaneously?

Are you both using Macs, rather than Facetime on iPad or iPhone? If you have desktops at both ends of the conversation, you could consider using iChat as an alternative to Facetime and share your son's desktop directly with the tutor.

Try this setup. Adapt the equipment to your situation. Your computer has a tablet and Sketchbook. Now you can write or draw or type to the screen. Have your iPhone running FaceTime looking at the screen of computer. Use the back camera and possibly something like a tripod. Hope it works!
