My headphones won't fit in the jack when the case is on. Is there an adapter I can buy?

If you are using the stock iPhone headphones, the plug fits just fine. But the hole around the jack is just big enough for the plug; aftermarket jacks that have plugs that have larger jacks won't fit. But most cases are like that anyway.
