Is there a difference in audio quality between HDMI or optical audio? Both of them would would/could connect into my HDMI Audio Receiver.

Which version is better to receive and play full 5.1 or 8.1 surround sound? Either one or both?

    Yes. Optical can only handle uncompressed 2.0 PCM or compressed (dolby digital) 5.1, whereas you can have up to 7.1 uncompressed audio over HDMI. (Note: This is the summed up version to your question, there is a much more technical drawn out answer that I didn't feel was necessary).

    That being said, if the Apple TV is your source then you'll never have that many audio channels (as it stands today with purchases from iTunes) coming through, so feel free to use either.
