Is it possible to have more than 1 Raid 0 volume spanning the 5 drives? e.g. in the 20Tb version, could I have 5 x 4Tb Raid 0 volumes?

To make a RAID-0 volume, you must have at least 2 drives. So...you could use Disk Utility to create 2 separate RAID-0 volumes from 4 of the drives, and then have a standard volume using the 5th drive.
The two RAID-0 volumes would be 8 TB each, and the single drive would be 4 TB.
