Quality is crystal clear. I've used it for voice recording, Skype calls, normal phone calls, facetime, etc. and had zero problems.
Having said that, headsets are not designed to record from far away. Quite the opposite, they're designed to filter out "background noise" and pickup the closer sounds coming from your mouth.
You can get adapters for iPhone/iPod Touch/iPad that allow you to plug in a standard 3.5mm microphone. This will give you a wide range of microphone options to choose from...
If you have an iPhone or iPad, just use the internal mic, it's designed for wider area recording. If you have an iPod touch, then external mic of course is your only option...
