Does the AP Extreme have to be attached to a computer?
Once I get it set up and attach hard drives and printers, does the Extreme have to continue to be attached to a computer? Or can I run iTunes on a laptop on the network, and the Extreme will then send it to speakers etc. over the wireless network?

The Airport Extreme never needs to be attached to a computer for any of it's functions. It can be configured and used entirely over WiFi.
Of note however, the Airport Extreme does not feature a music streaming function. You may be looking for the Airport Express, which similarly can be configured and used entirely over WiFi, but lacks the extra ethernet ports, duel band wireless, and disk sharing of the Airport Extreme.
