Do you need to interconnect 2 or more of these units to have them be able to comunicate with each other in the event of an emergency?
If I have 2 or more smoke detectors in my house I have to have the interconnected so that if there is smoke in the basement the one upstairs will alarm as well. I know that they work with Wi-Fi, but if the power is out will they still communicate with each other?

Yes, but they all are connected to one another one after the other as you set them up. As a test, just now I shut down my wifi router and tested the devices - they all still talk to one another (when you test any one device, all the linked devices run the test at the same time). So they definitely will continue to talk to one another if there's a power outage and your WiFi is down.
