Do I have all rights with the student version of office for MAC?
The price is different are the "write" abilities the same. Do I have all authority as owner or does buying the student version somehow limit my capabilities? I do not need outlook but I do want the other programs.

Suggest you study the "License Agreement" which contains all relevant information about the "rights" you acquire. In essence, the difference between the student and business version is whether Outlook is included or not.
