can you use it with a games console that is wireless enabled - xbox 360? The strength of the wireless signal is very poor in my house.

Short answer - Yes! My stepson has Sony PS2 Playstation and Windows Laptop, both wirelessly-enabled.
Both work fine (wirelessly) off the Airport Express in his room, which is connected via Ethernet cable to an Airport Extreme at other end of house (which is, in turn, connected to a cable modem).
Having the two Airports enables him to roam around the house with the PS2 or his laptop.
Previously I had a Belkin wireless router, and the range was very poor and it would "hang" regularly. Since installing the Airports, results have been fantastic! The main printer is also connected wirelessly and is accessible from both my iMac and his Windows laptop. Don't know if the PS2 has a print function, but amsure it would work too if it did.
