can i use this as a single plug-in for multiple displays and accessories?
At work, I have the following set-up:
Macbook Pro plus into the following:
-Mac Display via thunderbolt (several things are plugged into the display's usb)
-Ethernet via thunderbolt adapter
-usb from display
Can I use this as a single connection pt (except power) for the three other cables I must plug into each time I connect or disconect my laptop from my desk?

That is its exact purpose. However, note that it cannot provide power for large external devices without their own power cable.

Everything that you have stated should work, but you should note that the USB ports on the dock aren't powered enough to run a superdrive (the apple one) or to charge iOS devices/other USB devices.
Other than that, you should be able to use the ethernet port on the dock itself and the USB ports on the dock as well as the display. And the display should work as well.
