Can I connect a "Multi Function" printer like Canon Pixma MP 240, AND use the scanner etc.?
Currently I use a DLink wireless router, and it is pretty useless with the printer (only one way comms).

Not using USB, but an Ethernet connected multi-function will work.
I'm using an HP-8500 (non-wireless MFP) connected to Extreme with Ethernet cable, and all computers are wireless to the Extreme's network.

Yes you can, the Airport Extreme comes with a USB port which you can plug in your Printer, Hard drive or other USB devices.
If you check out the Extreme's product page you can see this shown in an image mock up of possible setups.
