Is the VESA Mount Adaptor required for use with the 20', 23', or 24' cinema displays??

an adaptor is needed, but pre 2008 Cinema HD displays use M9649 G/A, which is discontinued

It is absolutely necessary on my 24" iMac, and I assume that would hold true for theother sizes.

Yes, all cinema displays have one big stand leg that needs to be removed so the VESA mount adapter can be put onto it.
