Will the HD 5870 video card support 10-bit output via miniDisplayPort to 10-bit capable monitors like the HP DreamColor LP2840zx or the NEC PA271W?

Apple at this time does not support 10 bit output. I have spoken to apple product specialist support, and that is the official word as of 12/10.2010 from the engineering department.
