Does Apple have a USB Ethernet Adapter that does Gigabit ? Why doesn't this product do gigabit ?

The speed of USB 2.0 is 480mbps. That's the limiting factor. There are a couple of third party Gb Ethernet-to-USB adapters, but they are not running at truly Gb Ethernet speed.
