How many of these displays can I use with the new iMac 27-inch?

One. The iMac has a single Mini DisplayPort which can drive a single external display.

It is my understanding that the iMac with Thunderbolt will be able to drive two of these displays in a daisy chain - these will not work with an iMac with a display port connector only.
