Do the Apple keyboard F10, F11, and F12 volume keys system volume control these speakers or is the Paradigm remote required? How about iTunes volume?

Yes, absolutely. Once the Millenia CT is plugged into the headphone output you have the same controls that you would expect from a headphone. Keyboard control for volume up/down, mute and iTunes control.
