Can I use this speaker or any other to amplify my iPad while I have it connected to an HDMI projector?

Sure, but you probably won't get enough volume for a classroom of 20 people or more. Other wireless speakers deliver more volume. The Zooka's advantage is that it's extremely compact, about the size of an empty cardboard core for a roll of paper towels.
