Can you use this to connect a non thunderbolt display? So something like MBP to thunderbolt display to hub to regular monitor?

Yes, works fine for me with an old Cinema Display via Mini Displayport to DVI Adapter.
But Attention:
The eSATA Ports are not working with external Software RAIDS!- Answered by Thomas W
