Which Mac for Semi-Pro Video Editing?

I currently have a 1.6GHz i7 Processor 6GB laptop on a PC. I'm trying to edit 1080p video shot on a Nikon d7000, but this laptop just isn't cutting it. Trying to play the files results in very choppy play, and editing is very slow. I want to get a desktop, but as I'm a college student, my computer has to be portable. Would a 15" Macbook Pro with 2.5GHz i7 processor and 8GB RAM be sufficient and help me do these things smoothly? I would do Photoshop and Video Editing with Windows 7 installed (because I already have the software for Windows), and do everything else with OSX.
