When in the office, I do not use the laptop display. Instead I use 2 large monitors. How would I connect a MAcBook Pro to this set up?

With Mountain lion turn on Air play Mirroring. Selet and Apple TV. (You need apple TV connected the first monitor). Conect the 2nd Monitor hard wired to first.
HDMI out:
