Mac Mini with two displays ___ One using Thunderbolt connection while the other using HDMI receptacle. Any problems with that arrangement?

No problems what so ever. I've set up my son's Mac Mini with two displays doing this.
All you need is a display port to DVI adapter cable, a display port to VGA, or a display port to HDMI. The type of adapter cable you choose depends on the video input on your second monitor. These adapter cables can be purchased online at Apple or your nearest Apple Store.
Once you connect the two monitors you can choose which one is the primary and which is the secondary. Very easy to do.
