Can I manually turn this display off while keeping my mac mini that is hooked up to it awake? (I use my mini as somewhat of a server)

    Yes, if you want to save the 100 or so watts of power the screen will take.
    An easier option would be to set the screen saver to blank the screen which will greatly reduce the power requirements.
