There's a lot of features for use by blind people- there's VoieOver, which will read you everything on the screen and reads text as you're typing it. There's also Dictation, which will help you speak to type. You can use a refreshable braille display that uses Bluetooth to read VoiceOver output in braille. The iPhone 5, iPhone 4S, and iPhone 4 work with pretty much any wireless braille display. You can also assign distinguishable vibration or ring tones for different contacts. Last, the iPhone does come with EarPods with a remote/mic, so that you can just press a button to start dictating to the iPhone. Since these features come with every iPhone Apple sells, you can get them for the best price with the iPhone 4 at the moment.

It depends on how you are going to use your iPhone. If you are a very heavy photographer/video maker or love apps then ideally you'd want the 64GB with all the space. If you don't do the following above then really the 32GB would suit you. I have the 32GB iPhone 5 its amazing!

I can't see why not, so long as the SLR Camera has USB and can work as a USB Mass storage device or uses pictbridge etc then it should work just fine.

There is no LTE system available from any carriers in Taiwan; as a result, there is no differences between iPhones 4S and 5 both used in there. However, micro-sim is prevalent among carriers in Taiwan, while nano-sim is currently limited quantities by three major carriers, Chunghwa Telecom, Taiwan Mobile, and FarEasTone, in Taiwan. In my opinion, iPhone 4S is so far the best one you get when you travel to Taiwan until iPhone 5 starts selling in Taiwan.

Whether you get a 16. 32, or 64 GB iPhone depends on how much music and how much the tunes are compressed, how many videos, how many pictures, and how many apps you will have on the device.
For most people the key factor will be the number of tunes at what bit rate you have. For example on my iPhone using the lowest bit rate, 128 kbps, 5,295 tunes use 21.3 GB of storage, at 192 kbps it would take 25.4 GB, and the highest bit rate 256 kbps bumps the storage to 29.4 GB. Using the Apple headphones my hearing is not good enough to discern an appreciable difference in sound quality between 128 kbps and 256 kbps. However if you were playing through a high quality sound system or very high quality headphones you would likely hear a noticeable difference.
A full length movie will take a little under 2 GB of storage, but thanks to iCloud storage, photos end up taking little storage on the iPhone. Storage required by apps is dependent on the particular app but the 91 apps installed on my iPhone occupy 8.6 GB of storage.
Only you know what your habits are and only you can judge how much storage you need. My wife just upgraded to an iPhone 5 and went from a 64 GB model to the 32 GB version after looking at how much storage she is actually using (only about 12 GB). I will be upgrading Monday, and I am going to stick with the 64 GB model. depends on what you are going to be using it for. if you are going to have alot of movies and music i would say to get either the 32GB or 64GB, but if you are only going to have a few apps and mostly use it for messaging and calling the 16gb should be fine.

From what your stating you may be better suited to a 32Gb phone. If your currently using 7GB on your phone and plan to be using the new one a bit more (and the games are getting bigger in size as the graphics are getting better!) then I would go for the 32Gb in your position.
I have owned a 64Gb iPhone 4s and I found that I had not even used half of that and it included having a few movies on there to watch as well.
