Does this output a mirror image of the iPad screen or just certain apps?

As long as it's the iPad 2 or the new iPad (3) then it would mirror the whole screen, so for example, you'd be able to see the background wallpaper and the app icons.

By default, iPad apps are designed to output a mirror image. There are certain apps that disable this feature. It is up to the individual app programer to determine if this will be permitted.

It can mirror nearly all apps, some have a built in video out option which allows for full screen output, such as Keynote.
