I would go with a Mini ,upgrade with a full 8 gig of ram, dont fall for the ssd trap... very expensive ,and if you are editing all changes to your image takes place in ram anyways.
I macs have a very nice display but are not very faithful to the source image,also they are very difficult to calibrate properly -uncalibrated they will create dark prints.As for a display the Dell U2410 is a lower cost display much better suited to editing.Please check out www.shutterbug.com they have reviewed both the Mini and the Dell display & love them both.- Answered by Edward L from Sandusky

Personal bias...I own this machine. iMac 27" with the 3.4Ghz i7 option. 4 cores, 8 threads, a powerful GPU. If you add enough RAM (8GB or more) and opt for the SSD as the main storage, that thing will fly! I know, I have one configured just that way.
