If I connect the airport to a stereo but not to an ethernet cable (stereo not near ethernet output), will I still be able to play iTunes wirelessly?

Yes, as long as you have a wireless network within range of the Airport Express. You then use the Airport Utility to connect your AE to your WiFi network.
